Now that fall is finally upon us, and the weather is getting cooler, comfort meals seem to be the latest in dinner desires. A lot of thick stews, hearty soups and rich meals.

Now I love a steaming bowl of soup every now and then, but more than anything else I love salads.  They are light, crispy, juicy, and simply refreshing. After all those starchy and heavy meals you just need to step back, detox, cleanse and enjoy a vibrant flavorful salad packed full of vitamins and nutrients.

Especially during the colder months I crave fresh veggies.

I want them as close to natural as possible; not baked, broiled or sauteed. I want them fresh, in all their glory.

Just lightly tossed together in a dressing that does not over-power any one ingredient, but fuses the flavor together and creates a coherent taste melody in your mouth.

Since I eat so many salads I love to switch things up. Seeking out new salad ingredients is my thing. I can't be eating the same old salad day after day. With variety and new toppings, add-ons, this keeps things exciting.

My latest salad ingredient craze?

Hearts of palm.

Hearts of palm are a high underrated ingredient in mainstream cooking that absolutely deserve its place in the spotlight. This is a vegetable harvested from the inner core of a particular type of palm tree. You can normally find it in the canned food aisle and it resembles tall thick spears, which when sliced unravel into an inner round and an outer ring.

Simply a fascinating vegetable with a crisp texture, almost reminiscent in flavor of an artichoke. High in fiber, potatssium and vitamin B6, while you're getting ready for the cold weather and bundling up in warm sweaters this is the kind of food you need to be eating to stock up on vitamins and nutrients.

Needless to say I absolutely love adding hearts of palm to all sorts of recipes. For this simple salad I chopped up tomatoes, avocados, cilantro and gently sliced the hearts of palm spears into rounds.

Toss those ingredients together and drizzle them with a creamy dressing. For this salad I wanted a tangy, lime based dressing that was just a tiny bit creamy. Instead of using mayo, I created a dressing with coconut milk - a lighter and fluffier alternative. Lightly whisk together dijon mustard, lime juice, olive oil and coconut milk. I stopped buying store bought dressing years ago when I realized how much more fun it is to make your own (and way healthier of course).

Overall this salad was exactly what I needed. The mix of colors just screams freshness to me. From the deep green of the cilantro to the bright red of the tomato, this is a dish that adds life to the rest of your meal. The juicy tomatoes blend with the creamy avocado and firm hearts of palm rounds and literally form a Christmas themed party in your mouth.

Ingredients

  • 14 ounce can hearts of palm spears, sliced into rounds
  • 1 large tomato, cubed
  • 1 avocado, cubed
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon minced ginger
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon coconut milk
  • salt/pepper to taste

Directions

  • In a large bowl combine hearts of palm rounds, cubed tomato, cubed avocado and chopped cilantro. Add salt and pepper to taste.
  • In a small bowl whisk together dijon mustard, olive oil, lime juice and coconut oil. Whisk until smooth.
  • Drizzle salad with dressing when serving.
